Once they’re done, they’re smoky, spicy, and just dramatic enough to make me feel like I put in more effort than I actually did.

Then comes the bread. I toast it until it’s golden and just a little crisp, because texture matters and soggy bread is a crime. A smear of mayo, a few slices of tomato, a little lettuce, and suddenly these tiny bites look like miniature po’ boys that decided to go to a fancy event.

These Blackened Shrimp Po Boy Bites are really simple to make and pretty quick too.

Ingredients
  • 10 26-30 Shrimp Peeled, deveined and tail removed
  • 10 1/4 inch Baguette Slices
  • 2 Roma Tomatoes Cut into 1/4 inch slices
  • Lettuce
  • Blackened Seasoning
  • Unsalted Butter
  • Grated Parmesan
  • Garlic Powder
  • Dried Oregano
  • olive oil
  • Green Onion Chopped
Directions
  • Step 1 Cut enough lettuce and tomato slices to cover the baguette slices and set aside.
  • Step 2 Season shrimp with the blackened seasoning and set aside.
  • Step 3 Preheat a heavy skillet and oven broiler.
  • Step 4 Cut 10 1/4″ baguette slices
  • Step 5 Put butter, parmesan, garlic powder and oregano on the slices and put on a baking sheet.
  • Step 6 Place under oven broiler and lightly toast.
  • Step 7 Add 1 tbsp each of oil and butter to the pan and cook shrimp until done. About 1 minute per side.
  • Step 8 Assemble bites by placing lettuce, tomato and shrimp on baggette slices.
  • Step 9 Garnish with green onion and serve with Cocktail or Remoulade Sauce.
